To begin this delicious vinaigrette recipe, you will first need to take out a sharp kitchen knife and remove the
thin green outer skin from the watermelon rind. Once that is done proceed to thoroughly chop up the rind.

Next take out a pot, add in the rind and kosher salt, and then cover the rind with water. Let the rind soak in this
salt mixture for one full hour.

When the one hour has expired, add in the vinegar, honey, black pepper, and coriander. Place these contents over
medium high heat, and then bring them to a boil.

Once you have a rolling bowl, back the heat off and let the contents simmer for about ten minutes, then remove
the pot from the stove and let it cool to room temperature.

When you are ready to serve the vinaigrette, whisk in the extra virgin olive oil, red pepper flakes, thyme,
shallots, and parsley.
